도심형 레스토랑이 텃밭과 가든을 만나면 어떻게까지 발전 할 수 있을까? 전경련 51층은 벽은 막혀있으되 천정이 뚫려있는 옥외공간이다. 나는 이곳에 토마토, 가지, 고추, 상추, 허브… 등이 자라고, 그라스와 큰꿩의 비름, 아스타와 샤프란… 등 아름다운 꽃들이 어우러지는 꽃밭을 디자인하였다. 수호초를 담은 수많은 토화분을 벽에 걸어 가든 전체의 중심을 잡고자 했으며 형태가 다른 두개의 작은 글라스하우스가 꽃밭 사이에 놓여있다. 이곳에선 Private dining 및 Farm Party형태 모임이 가능한 곳이다. Sky farm 이곳은 단순한 꽃밭이 아니라 새로운 비지니스 모델로서… Space Sales가 되는 가든으로서의 새로운 유형이랄 수 있겠다. 50층은 총 바닥면적이 1992m² (602평)으로서 동서남북 사방이 확 트인 좋은 전망을 가지고 있다. 전세계의 브런치 음식을 선보인다는 개념의 세상의 모든 아침/ 사대부집 곳간/ Promenade/ 이종국 셰프의 코리안 아트퀴진… 등 네곳의 Section으로 구성되었다. 무엇보다도 3개층이 오픈되어 있는 공간에는 Space in Space 개념으로서 이번 Project의 상징인 파빌리온이 9.5m의 높이로 계획되었다. 식물원을 닮은 파이프 구조물로서 한옥을 모티브로한 형태미를 보여주고 싶었다. 이곳에선 수백명의 사람들이 나무 그늘 아래서 식음료를 즐기며 도심에서 부는 바람이 아닌 정원의 바람을 상상하며 세상의 혼잡함에서 잠시 벗어나는 녹색테마공간을 만들고 싶었다. 이 안에서는 상상할 수 있는 모든 것이 가능하다. 색다른 결혼식은 물론, 작은 음악회, 새상품 발표회 및 패션쇼… 등 사대부집 곳간은 윗층(51층)과 관조되어 있는 2개의 선큰이 있다. 정갈한 한식뷔페와 반가의 6첩반상이 제공되는 컨셉이며 3개의 큰 기와집이 자리잡고 있는 형태의 구성이다. 낮은 천정으로 인해 겹쳐진 지붕의 선들이 충분히 표현되지 못한 것은 아쉬운 부분이다. 텃밭과 정원을 곁에 두고, 셰프들이 수시로 온실을 오가며 토마토를 따러가는 모습을 볼 수 있는 Sky Farm. 우리도 영국 런던, 뉴욕 못지 않은 Roof garden을 가졌다는 것에 자부심과 보람을 느낀다면 지나친 사치일까? 농사의 한자 農(농)은 별 진위에 노래곡을 쓴다고 한다. 서정적인 표현이다. 가든 작업 또한 하늘을 한번이라도 더 봐야만 하는 작업이다.

How far can an urban restaurant go, when it meets a greenhouse and a garden? The 51st floor of the FKI is an outdoor rooftop space with glass walls wrapping around the whole floor. On the rooftop, I designed a flower garden where tomatoes, peppers, lettuces, and herbs grow along with beautiful flowers, such as the Sedum spectabile, Aster, Saffron, and grass. In order to emphasize the garden, countless clay pots with Japanese pachysandras were hung along the walls, and two small glasshouses varying in shape were placed in the flower garden. Various meetings, such as private dining and farm parties can be held in this space. Sky farm is not an ordinary flower garden, but a new business model where the garden is a capable area for space sales. The 50th floor has a total area of 1992m² with an open panoramic view, which carries a great view on all directions. The floor is composed of four sections: “Sesang ui Modeun Achim” (All Day Fresh Kitchen) - a restaurant with an concept of presenting brunch from all over the world. / “Sadaebu Jip GotGan” (High Official’s Foodshed) / “Promenade” / Chef Jong Kook Lee’s “Korean Art Cuisine.” Notably, the project’s iconic 9.5m-high-pavilion has been planned to sit in the triple height open space with the concept of a space within a space. I wanted to show the beauty of form conceptualized from Korean traditional houses, HanOk, using pipe-structures which resemble images of botanic gardens. I wanted to create the zone with a greenery-themedspace in mind. A place where hundreds of people visit and rest beneath the shades of trees, and imagining not the urban winds, but the garden breeze where they can momentarily escape from chaos. Everything is possible in this space. Special weddings, small music concerts, new product launch conferences, fashion shows, etc… “Sadaebu Jip Gotgan” has two sunken areas connected to the 51st floor. The space is composed of three large Korean traditional tiled-roof houses with a food concept of a neatly assorted Korean cuisine buffet served along with 6 Korean ‘Yangban’(noble class)- styled side dishes. However, I have some regrets because overlapping roof curvatures were not depicted enough due to the low ceiling height. Also, a structural limitation of having only one entrance in a 1980m² area, and the overlapping of the four section programs with realistic problems, such as the fire compartment, gave us a difficult time. Keeping crop fields and gardens close by, Sky Farm is where people can witness chefs constantly going back and forth to the glasshouse to harvest tomatoes. Is it too much of a luxury to be proud for having a rooftop garden as good as ones in London or New York? The Chinese character for farming, 農 (Nong), has a lyrical and poetic description, “writing a song on top of a star.” Gardening is also a task that requires us to go out and witness the skies as many times as possible.
